Its harvest time and I have zucchini and tomatoes coming out of my ears. I decided to try this omelet combination a few weeks ago and it was SOOO GOOD! I've made it about 4 times since.
ZUCCHINI TOMATO OMLETE
Sautee a few small zucchini's and yellow crook neck squash with onion, pepper (I used Anaheim), and fresh tomato, a little butter and salt and pepper. (Sorry, I don't have exact amounts).
Set aside and cook your egg for the omelet. Add Fresh Mozzarella or Cheddar Cheese and the veggies. Heat through to melt the cheese and fold in half.
Cover the omelet with Avocado, Fresh tomato chunks and fresh basil. Honestly, this is SO YUMMY!!!
