Soft Pretzle Bites

I saw these on Pintrest and decided to try them with three Rhodes Frozen Rolls. I thawed them cut them into four pieces each. Boiled them, then roasted them in the oven until they were brown, brushed them with a bit of butter and rolled them in Parmesan Cheese. They were delicious.

Apple Dip


I love this apple dip. It's SO EASY and so yummy. It has two ingredients. Cream cheese and brown sugar. You can add toffee bits if you have them, but just the cream cheese and brown sugar is delicious. It's a great camping treat!

APPLE DIP

8 oz. Cream Cheese
1/2 C. Brown Sugar
1/4 C. toffee chips (optional)

Mexican Egg Rolls

My neighbor made this recipe for a gathering and it was amazing. It is so yummy with the avocado ranch dipping sauce. I love this dish. I decided to make it last night with a few alterations... You've got to try it,it's TASTY!

MEXICAN EGG ROLLS

1 Chicken breast filet
1 Tbs Vegetable Oil
- Cook chicken in oil, set aside
Cook the following until tender in the same pan:
2 Tbs minced red bell pepper (I used green)
2 Tbs minced green onion (I used regular onion)
-Add chicken and the following:
1/3 C. frozen corn
1/4 C. black beans, rinsed
2 Tbs frozen spinach, thawed and drained (I used fresh)
2 Tbs green chilies
2 Tbs minced fresh parsley (I used celantro)
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp salt
Dash of Cayenne Pepper
(I added one diced tomato at the end to give it a fresh taste)

Cook until all ingredients are cooked through, add 3/4 C. Monterey Jack cheese. Stir until Cheese is melted. Spoon chicken mixture into tortillas. Freeze for 4 hours or overnight. Deep fry or spray with cooking oil and bake at 375 for 15 minutes. (I cooked them fresh on a flat griddler.)


AVOCADO RANCH DIPPING SAUCE

1/2 C. Prepared fresh Ranch dressing
1/4 C. Smashed fresh avovado or 1 avocado
lime juice from half a lime
celantro leaves
blend together

Serve with egg rolls.
Yeild: 6-8

Halloween Treats

I don't have anything spectacular to share. In fact, it's a little sad. For the family Halloween Party I made the two following appetizers:
Deviled eggs turned into spiders. (I know spiders have 8 legs, they just didn't fit.)
Baby Mummy Dogs. The nieces and nephews loved these!

Deviled Eggs

This is my grandma's recipe for Deviled eggs. They are really good and a crowd pleaser at parties. I'm always told how tasty they are. They don't last long at family parties. Everyone in the family loves them! Grandma usually has to limit how many each person has. "TWO each!"

Boil eggs, once cooled and shells are removed, cut in half and scoop out yolks into a bowl. Mix with Mayo, mustard, salt, pepper, and a little sugar. Mix until creamy. You can spoon into egg whites or to make it fancy, use a pastry bag and tip. Because I made these for myself, I just used a spoon.

DEVILED EGGS
For 3 eggs:
1 Tbs. Mayo
1/4 tsp. Mustard
salt and pepper to taste
1 tsp. sugar


Sprinkle with Paprika and fresh chives.
Keep refrigerated.

Fresh Pico De Gallo

I was home alone on Saturday so I decided to make something for lunch. After lots of rummaging I decided to make fresh salsa.

FRESH PICO DE GALLO

garden fresh tomatoes (I used 6 medium/small)
2 small onions
1 lime
1 jalapeno
celantro (I forgot to put it in the picture)
green pepper
garlic
salt

It's not an exact recipe, I make it according to taste.
