Zucchini Tomato Omelet

Its harvest time and I have zucchini and tomatoes coming out of my ears. I decided to try this omelet combination a few weeks ago and it was SOOO GOOD! I've made it about 4 times since.

ZUCCHINI TOMATO OMLETE

Sautee a few small zucchini's and yellow crook neck squash with onion, pepper (I used Anaheim), and fresh tomato, a little butter and salt and pepper. (Sorry, I don't have exact amounts).

Set aside and cook your egg for the omelet. Add Fresh Mozzarella or Cheddar Cheese and the veggies. Heat through to melt the cheese and fold in half.

Cover the omelet with Avocado, Fresh tomato chunks and fresh basil. Honestly, this is SO YUMMY!!!

Orange Rolls

I'm asked to make these rolls often. They are very light and delcious.

I use my Croissant recipe for the dough:

Ingredients:

• 2 tablespoons active dry yeast
• 1 cup warm water (110° to 115°)
• 2 tablespoons plus 1/2 cup Granulated Sugar, divided
• 2 cups warm sour cream (110° to 115°)
• 2 eggs, lightly beaten
• 6 tablespoons butter, melted
• 1-1/2 teaspoons salt
• 1/4 teaspoon baking powder
• 7 to 8 cups all-purpose flour
Directions:
In a bowl, dissolve yeast in warm water with 2 tablespoons sugar; let stand for 5 minutes. In a large bowl, combine the sour cream, eggs, butter, salt and remaining sugar. Stir in baking powder, yeast mixture and 4 cups of flour until smooth. Stir in enough remaining flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Turn onto a lightly floured surface; divide in half. Roll out into a circle cut into triangles and roll into croissant shape. Cover and let rise until doubled, about 20 minutes.

Instead of rolling into croissant shape, roll out flat, 1/4 of dough at a time. Add Orange filling:

ORANGE FILLING

Juice and zest of one orange
1/4 - 1/2 C. Sugar
1/2 C. Butter

Brush onto dough and roll into log. Cut into 1" rounds.

Bake at 350° for 20-25 minutes or until golden brown. Cool on wire racks.

Frost with Orange Cream Cheese Frosting:

ORANGE CREAM CHEESE FROSTING

8 oz. cream cheese, softened
1/4 c. butter, softened
1-2 c. powdered sugar
zest of one orange
all the juice from the orange
1/2 tsp. vanilla
pinch of salt

Mix until creamy and fluffy (about 5 minutes in a Kitchen Aid)

Apple Pancakes

One Saturday I had gone for a really long bike ride first thing in the morning with my parents, as a treat, we decided to go to breakfast. We happened upon a little shop called the "Original Pancake House". It's AMAZING! I didn't have the Apple Pancake, I had their California Eggs Benedict. Which, I crave nearly every weekend. I will recreate those at some future time. For now, I give you, APPLE PANCAKES!
APPLE PACAKES

Fry a few apples, I used 4, in a little bit of butter mixed with sugar and spices. I like brown sugar with cinnamon, cloves, allspice and nutmeg. (just a dash of each, two dashes of cinnamon)
Cook apples until soft.
Add the following to the pan to put straight into the oven:

3 eggs
1/2 C. Milk
1/2 C. Flour
1/8 tps Salt
Blend together

Do not stir, put straight into the oven (Preheated to 400 degrees) Cook until golden brown around the edges and large pumps form.

Turm upside down on plate and serve.
If desired, serve with a little syrup.

Yield: 3-4

Biscuits and Sausage Gravy

Years ago I lived in Nebraska. I met a little old lady who would make this recipe once a week. I loved having this treat once in a while. I don't make it very often because it's not exactly healthy. In fact, the calorie count would probably cause me to have a heart attack. But, I haven't made this for at least a year and I probably won't make it again for another year. It's still a really good little breakfast item.

SAUSAGE GRAVY

1/2 lb. Sausage (I used Jimmy Dean - Original)
Cook until cooked through or slightly brown, like you would ground hamburger.
Add 1/2 stick of butter and 3 tbs. flour and 1/2 tsp black pepper mix and brown slightly, add milk and a little cream until desired consistancy, about 2-3 cups.

Pour over biscuits. I just used Pillsbury Grands.

Thai Omelets

All my life growing up we would often have Thai Omelets. Dad would make them on a Saturday or Sunday morning and sometimes for dinner. It's a family favorite and one that the in-laws - my brother in-law and two sister-in-laws - have learned to love. It seems strange at first because of the ingredients, but it's healthy and very flavorful. The fresh veggies, although an odd combination, are very good together and you will want it again after you've tried it once. I can almost guarantee you this one isn't out there on the web. It's a one of a kind and very delicious. A MUST try!

The filling consists of equal amounts of Tomatoes, Cucumbers, Onions, Bean Sprouts, Green Beans, and Green Onions. And a few cloves of minced garlic and the same amount of ginger, (About 2 tsp. each). And a tablespoon of Maggi seasoning. (It's a sauce available at Asian food stores, and very inexpensive, but tasty!)
Dice all veggies.
Cook onion, garlic and ginger until tender, then add cucumber, green beans cook, then add bean sprouts and tomato last. About 10 min (from start to finish) until veggies start to sweat and are slightly tender. (Don't over cook)
Drain filling in a strainer over a plate or bowl to loose some of the water.
Cook 2 mixed eggs in a large round plan in 1 tablespoon hot oil. Oil MUST be hot to cook right, like a big pancake.
Add filling to flipped egg.
Fold sides in to make a pocket. Just folding in half like a cheesy omelet won't work. The filling isn't being held in by any thing other than the sides of the egg.
Serve over a bed of steamed rice with soy sauce and red sauce.
Serve with a red sauce, no this is NOT ketchup. It is a Thai sauce made from tomato paste, brown sugar, Rogers Syrup, rice vinegar, white pepper, garlic and some thai sauces pictured below:
Mix all ingredients together (recipe below).

THAI OMELETS

2 TBS. Oil in HOT pan
2 tsp. Minced Garlic
2 tsp. Minced Ginger
2 Tbs. Maggi Seasoning (found at oriental market)
1 C. Onion
1 C. Tomato
1 C. Cucumber
1 C. Green Beans (Fresh)
1 ¾ C. Bean Sprouts (thoroughly rinsed)
Cook until steamed and tender set aside in a strainer to add to omelets.

2-3 eggs will be used for each omelet.

Serve over steamed rice with soy sauce and red sauce.

RED SAUCE:
1 small can tomato paste
1 clove garlic, minced
2 Tbs. brown sugar
Dash of salt & pepper
A pinch of white pepper - optional
1 Tbs. Rogers Syrup (From Canada) (Kero Syrup would work too)
1 Tbs. Fish Sauce
Add a few squirts of store bought Spring Roll Sauce for spice

Bled together with a hand held blender.

FRUIT DRINK
We also have Thai fruit drinks with our Thai Omlets. They are now considered "Smoothies" but I've been drinking Thai fruit drinks since I was old enough to hold a glass. This one consisted of banana, orange, mango and ice.
